Cooks Corner

Thanks John for a great run and BBQ, we all really enjoyed it.Some people requested the tray bake recipe so here it is ,especially for Joyce and Anne.
'Dawn's running tucker' as seen at John H's sausage sizzle:

Chocolate biscuit cake:


175g butter

2 tbsp golden syrup

250g dark chocolate cut into pieces

280g rich tea biscuits

85g raisins

85g chopped roasted hazelnuts

1 - Lightly grease a 23cm cake tin. Melt the butter, golden syrup and chocolate in a bowl in the microwave or in a saucepan over a very low heat.

2 - Place the biscuits in a bag and crush with a rolling pin, leaving some slightly larger pieces. Tip into the chocolate mixture with the raisins and hazelnuts. Stir well.

3 - Spoon the mixture into the prepared cake tin, pressing it down well to get a smooth even surface. When cool, chill in the fridge then serve, cut into squares.
